That's either a caching issue or you have e-mail validation turned on and the members who have changed their e-mail addresses have not yet validated them. Double check against the member's profile e-mail address to verify that they are indeed different. If so, it's a caching issue as, once a new e-mail address is validated, it overwrites the original address so there's no way the e-mail list could possibly be pulling it out of the database.
