A category is not visible to those member who don't see all its forums. In other words: set all forums of the desired category hidden and the category is automatically hidden.
Yes - I like that feature and use it often but only discovered it when I signed in as a regular member. Whoever had the forsight to "turn off" the category to the public when all the forums are private was smart!
