Someone hacked into my forum, cleared everything and left their name all over the place (see: http://www.eslkidstuff.com/forum/default.asp)

Is there any way to protect against this? I really can't understand why someone wants to hack a teachers discussion forum.

Anyway, is there any way I can recover the deleted postings or will I have to start it all again from new?

You can only recover deleted posts with a backup of your DB. If you hadn't done it so far I suggest that you start to do it regularly from now on.
You may also contact your host see if they have backups that you can use to restore your database.

Any, apply the security bug fixes to ensure that your forum won't be hacked again. Here, the second post in this thread has several links to important bug fixes:
