Is there a MOD floating around out there that can allow users to choose a different icon than the folder to have appear next to their topics?

Just to let you know, though, it won't do exactly what you want - rather than replacing the folder icon with the user-selected icon, an extra column is added to the table on forum.asp to hold the new icon.

ok, then is there a way to possibly delete the old one? The one with the folders?

you could just remove the column, or instead of adding a new column, replace the existing one.

That's what I'm talking about, I just wanted to make sure that it wouldn't destroy the rest of my forums or anything by doing that.

The only problem you'll have is that there'll no be no indication of whether or not a topic has new posts of if it's a "hot topic".
