I was wondering if anyone knows the different data types of fields for SQL server . I just need to know what the data type for long types on text is there apart from NTEXT?

Find the documentation for SQL Server in the Platform SDK section at http://msdn.microsoft.com/library

text, ntext, char, varchar, nchar, nvarchar are textual data types. varchar holds up to 8K in SQL 7.
