We are using SQL dBase.

How do we protect our users profiles and their articles, comments,
our categories and topics?

When SQL is backup what is actually back up?

If our site is hacked or nuke or..., How to accomplish restore of the
our Forum if SQL only has the dBAse data fields?

it is generally the responsibility of your webhost to backup your SQL database, so you should ask your webhost how often this is done and what the procedure is if you need to do a restore.
