The're all fundamentally the same OS, but built to scale to your companies needs/requirements (and obviously they cost more as you scale up). e.g a Standalone webserver, would only need WebServer edition, a larger company wanting to perhaps run SQL Server or other applications on the box would require as a minimum Standard (SQL Server will not install on Web Edition) .. larger companies go to Enterprise, or even Datacentre Edition which is another level up.
