In my email config I ONLY have CDOSYS, how do I get the rest?

That's because your server only supports that one. Why would you need the others?

I need to be able to send e-mail, and my server won't relay the e-mails. Any suggestions?

Install ASPEMail or the component that you want to use.

I figured out the problem, now I can connect to my Exchange Server 2003, but I can't send the e-mail, how do I get my server to relay the e-mails, although NOT be open relay?

Exchange configuration is a bit of a beast - not really lay-user stuff.

Try http://www.microsoft.com/technet for this kind of thing :)
