Does anyone have any idea why I can't change my e-mail ?
It says "yourmail@server.com" and I can't change it. If I try it says I do change it, but nothing happens.

If you're Admin you change it thru the Admin Options, not your profile.

Acutally I believe I've had that the problem before.. I think it was related to an issue with which members details where available when adding a user.

I'm not sure.. though.

It appears, that you're not able to change the mail address of the default created user.

If you create a new user, there's no problem.

Does anyone else have that problem?

I found out that if I enable the e-mail component, e.g. ASPMail then my answering the e-mail will change the default admins mail address, but with a mail component activated the feature of changing your default admins mail address is only possible through the database itself.

I believe this is a bug in the forum.

If you don't have an e-mail component enabled, then you should not enable e-mail validation. If you had disabled e-mail validation, you would have been able to change the e-mail address.
