Same remote server, but accessing two different databases each with their own login and password - is there no way to get them both listed in the panel on the left?
When I try it say that the server has already been registered and its a pain having to logout and login again entering the new accounts details every time... |

Try this
In the SQL Client Network utility, create an alias for each of the two instances of the server, then in ent manager register the two aliases
(not sure if it will work) |

I've never used that util before but I'm assuming I'm creating an Alias of type TCP/IP and connection parameters of [mydbname].[hostservername] ? |

Thanks.
On a final note, is it possible to get it to show only a single DB, as opposed to all on that particular server? (I could be going a little too far here I guess) |

When I first got the DB, I was quite shocked to see everyone elses DB's listed there too.
I imagined some kind of 'drill-down' feature, like the directory path you put in when using FTP to get you straight to your root folder. |

As far as I know EM will always show all the DB's on a server. If you use Access as a front end you can skip the list of all the other DB's other than the one you specify in the project connection. I find myself using Access 2000 most of the time for server management tasks instead of EM.
