I've been trying to figure out how to change the Calendar date from what appears to be the server date (the server is US-based - I'm not).

Is there a way to do this within the code?

Login as admin go to Admin Panel and set the Time adjustment under Server Date and Time configuration.

Yep ... did that, but that only changes the forum time to local time. The calendar still shows a day behind.

I'm more than surprised that I seem to be the only person having this problem of the Events Calendar date being different from the forum date/time (configurable with time offset in the Admin panel).

Does anyone have a way to sort this out?

Serverhacker is running an older version of the mod. I had since released a fix for this and several other bugs that were found after the first beta release of the calendar mod. You can download the latest version of the mod at snitzbitz then replace all the cal_ files.
