Is it possible to edit a post without it leaving a message saying the post was edited by the moderator.

There is an option to turn of the "edited by" message, but it will not show it for EVERY person, not just moderators.

I personally think that the edited by info SHOULD be displayed. If alleviates confusion.

Yes there is an option to do that, but it will remove the Edited by message regardless of who does the editing. Check Feature Configuration in Admin Options.
