I have divided online courses into topics in the forum and the professors want a printable/savable page that shows all activity in their forum including all posts and replies. Is their a page that someone has created for this purpose? It would be nice to have a text only screen of a whole forum (not the whole database, just a forum within the program) to save so I could dump the forum and create a new one at the end of the semester. Anyone done this?

No no one has donethis as far as I know. You could try looking at the printer_friendly.asp page and see if you can modify it to fit your needs. The printer_friendly.asp page outputs a text only page with all replies to a topic. You could modify it to do what you want.

Although the thought of a text only page of all topics and replies in a forum doesn't sounds too intriguing. Unless you don't have that much posts or topics in the forum.
